Provençal Baked Potato Casserole

  • 4 potatoes, scrubbed and thinly sliced
  • 2 tablespoons olive oil
  • sea salt & pepper to taste
  • 1 jar Provencal Roasted Veggie Pasta & Pizza Sauce


  • Preheat the oven to 350 degrees. Grease an ovenproof baking dish. Layer the potatoes, sprinkling each layer with salt and pepper and a drizzle of olive oil. Add the sauce over the top and bake until the potatoes are fork- tender, about 45-50 minutes.

This is an excellent pot-luck supper dish, that goes great with roast chicken or lamb.
