  • 1 cup Aroostook Corn Break Mix
  • 1 cup Aroostook 4 Grain Pancake & Waffle Mix *
  • 1 teaspoon baking powder
  • 1 cup chopped peaches
  • 1/3 cup sugar
  • 1 cup milk
  • 1 egg
  • 2 tablespoons melted butter or canola oil


  • Preheat the oven to 375 degrees and grease a 12 cup muffin tin. Peel, pit, and cut the peaches into a bowl. Sprinkle with the sugar and set aside. In a large bowl, whisk together the Aroostook Corn Bread Mix, Aroostook Four Grain Pancake Mix and the baking powder. Add the chopped peaches. Whisk together the milk, egg, and melted butter. Add to the dry ingredients, stirring just to mix. Spoon into the greased muffin tin and bake until a toothpick comes out clean, about 20 – 25 minutes.

* You may substitute 1 cup flour and 1 teaspoon baking powder
