Maine Wild Blueberry Muffins

  • 1 cup Aroostook 4 Grain Pancake & Waffle Mix *
  • 1 cup all purpose flour
  • 2 teaspoons baking powder
  • 1 cup Maine wild blueberries
  • 1 cup milk
  • 1 egg
  • 2 tablespoons melted butter or canola oil
  • cinnamon sugar


  • Preheat the oven to 375 degrees. Grease a 12 cup muffin tin. In a large bowl, whisk together the Aroostook Four Grain Pancake Mix, the all purpose flour, and the baking powder. Stir in the Maine wild blueberries. In a small bowl, whisk together the milk, egg, and melted butter. Add to the dry ingredients. stirring just to blend. Spoon batter into prepared muffin tin and if desired, sprinkle the tops with cinnamon sugar. Bake until a toothpick comes out clean, about 25 minutes. Cool on rack for 5 minutes, then remove from pan.

* May substitute 1 cup whole wheat flour and 1 teaspoon baking powder for the Aroostook Four Grain Pancake & Waffle Mix
