Easy Zucchini Casserole

Servings 4 generous servings


  • 1 large zucchini, cut into rings
  • 1 jar Provencal Roasted Veggie Pasta & Pizza Sauce
  • Sea salt & fresh ground pepper
  • 1 cup grated cheese


  • Preheat the oven to 350 degrees. Grease an ovenproof dish. Layer the sliced zucchini in the dish. Sprinkle with sea salt and fresh pepper. Pour the sauce over the vegetables. Top the casserole with grated cheese. Bake until the zucchini is tender, the sauce is bubbly, and the cheese is melted, about 35– 45 minutes. Let sit 10 minutes before serving. Serves four generously.

Serve with a green salad, garlic bread and Liberty applesauce for dessert!
