Cheryl's Sloppy Joes

Ingredients
- 1 pound lean ground beef or venison (90% lean or greater)
- 1 cup chopped onion (about 1 large)
- 8 ounce mushrooms chopped fine
- 14 ounce canned plum tomatoes with juice or 1 1/2 cup chopped tomatoes
- 2 tablespoon flour
- 1/2 cup water
- 1/2 cup cider vinegar
- 1/2 cup Jack's Organic Ketchup
- 8 whole wheat flour tortillas or hamberger buns
Instructions
- Heat a non-stick skillet over medium-high heat. Add the ground meat and cook until the meat starts to brown, breaking up the meat and stirring. Add the chopped onions and mushrooms and cook, stirring, until the water has evaporated, about 10 minutes. Sprinkle the flour over the mixture. Stir in the plum tomatoes and cook and stir until well combined. Add the water, cider vinegar, and ketchup and cook until thick, about 10 minutes.
- To serve, heat the flour tortillas for about 20 seconds in the microwave. Add a heaping ¾ cup of the sloppy joe mixture and roll up. Makes 8 servings of about 5 ounces each serving.
