Cheryl's Sloppy Joes

By adding fresh vegetable and using whole wheat flour tortilla shells, this convenient supper becomes a nutritional powerhouse, boasting 3 grams of fiber.
Small family? Freeze the extra for your own “fast-food” solution on a busy night.


  • 1 pound lean ground beef or venison (90% lean or greater)
  • 1 cup chopped onion (about 1 large)
  • 8 ounce mushrooms chopped fine
  • 14 ounce canned plum tomatoes with juice or 1 1/2 cup chopped tomatoes
  • 2 tablespoon flour
  • 1/2 cup water
  • 1/2 cup cider vinegar
  • 1/2 cup Jack's Organic Ketchup
  • 8 whole wheat flour tortillas or hamberger buns


  • Heat a non-stick skillet over medium-high heat. Add the ground meat and cook until the meat starts to brown, breaking up the meat and stirring. Add the chopped onions and mushrooms and cook, stirring, until the water has evaporated, about 10 minutes. Sprinkle the flour over the mixture. Stir in the plum tomatoes and cook and stir until well combined. Add the water, cider vinegar, and ketchup and cook until thick, about 10 minutes.
  • To serve, heat the flour tortillas for about 20 seconds in the microwave. Add a heaping ¾ cup of the sloppy joe mixture and roll up. Makes 8 servings of about 5 ounces each serving.

Nutritional analysis per serving: 213 calories, 21 grams protein, 23 grams carbohydrates, 5 grams fat, ( 0 grams trans fat), 385 mg. sodium, 3 grams fiber.
 Serve with a green vegetable like broccoli spears, green beans or frozen peas and carrot sticks.  Applesauce is great for dessert!.
