Applesauce Cake with Lemon Glaze

APPLESAUCE CAKE WITH LEMON GLAZE

½ cup butter, room temperature
¾ cup honey  (260 grams)
2 eggs
2 cups unsweetened applesauce
1 ½ cup rolled oats’
½ cup whole wheat flour
1 ½ cup AP flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoons cinnamon
½ teaspoon grated nutmeg
¼ teaspoon cloves
¼ teaspoon allspice
1 cup chopped dried cranberries or raisins

Lemon glaze
½ cup powdered sugar
1 tablespoon lemon zest
4 tablespoons fresh lemon juice (the juice from one lemon)

Preheat the oven to 350 degrees.   Butter a 9 inch by 13 inch pan.

In the bowl of your electric mixer, cream the butter and the honey.  Beat in the eggs and applesauce.

In the bowl of the food processor, process the rolled oats until finer.  Add the flours, baking powder, baking soda and spices.  Process until just combined.  Add the dry ingredients to the creamed mixture. Beat until combined.  Without washing to bowl of the food processor, chop the dried fruit.  Add to the batter.  Spoon the batter into the prepared pan and bake until a toothpick comes out clean, about 30 – 35 minutes.

In a small bowl, whisk together the glaze ingredients.  Cut the cake into squares and spoon the glaze over the cake.
